Spicy,hot and delicious wings well worth the work.


3 tbsp jamaican jerk (recipe below)
3 tbsp vegetable oil
3 clove cloves garlic (diced)
1 piece peeled fresh ginger (One 1 inch piece peeled fresh ginger diced)
1 bunch green onions (chopped)
12 sliced jalapeno peppers (pickled)
4 lb chicken wings

Jerk Seasoning
2 tablespoons dried minced onion
2 1/2 teaspoons dried thyme
2 teaspoons ground allspice
2 teaspoons ground black pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
2 tablespoons vegetable oil


Place the jerk seasoning, oil, garlic, ginger, green onions, and jalapeno slices in a blender, and blend until thick and smooth. Dunk wings in the mixture, and arrange in single layer on baking sheets. Spread remaining mixture evenly over wings. Cover with aluminum foil, and refrigerate 8 hours, or overnight.
Preheat oven to 300�F.
Bake wings 2 hours in the preheated oven.
Serve with Ranch dip.

Jerk seasoning
In a small bowl, stir together the dried onion, thyme, allspice, ground black pepper, cinnamon, cayenne pepper, and salt. Coat meat lightly with oil, then rub seasoning onto meat.
