Sushi rice


1 cup sushi grade rice
1 1/4 cup water
1/4 rice wine vinegar
1-2 TBS sugar


Measure out 1 cup sushi grade rice only
1 1/4 cup water
Place rice and water in pan
On high bring to rapid boil
Reduce to low cover with tight fitting lid.
Watch till all water has gone away and turn off heat
Let cook undesturbed 20-25 minutes
Can be made in rice cooker but must watch close as to not burn rice to bottom of cooker.

Place vinegar and sugar in small sauce pan and heat till sugar is dissolved.

Take rice and let cool preferably wooden bowl.
With wooden rice paddle pour vinegar mixture over rice.
Gently fold into rice to cover every grain.
If you rush this process you damage the grains of rice and the dish becomes useless.
